Food that should absolutely be eaten with your hands. These pulled pork tacos are a great time-saving recipe that the whole family can self-assemble to cater to even the fussiest of eaters.
Based on 4 servings, adjust as needed.
Place the prepared pulled pork into a microwave proof bowl, cover with a plate (to prevent a messy microwave) and cook at 900w for 7 minutes. Once hot, shred the pork using 2 folks and set aside.
Heat the oil in a large frying pan on a medium heat and add in the shredded pulled pork, chipotle paste and the refried beans. You can add a little of the smoky bbq sauce that may have come with the pulled pork if you like the mixture to be a little wetter and sweeter.
Smash the avocado in a bowl, season with a little salt and shred the baby gem lettuce.
Heat the mini tortillas either in a small dry frying pan or for 20 seconds in the microwave.
Serve the pulled pork and beans with the warmed tortillas accompanied with by the shredded gem lettue, grated cheese, smashed avocado the sour cream and the pickled red onions if you like. Use the tortilla chips to scoop and dip as you fancy.
