Bring your fajitas to the table still sizzling and let everybody make their own wraps to eat with their hands. Pure comfort food that's good for the soul.
Based on 4 servings, adjust as needed.
Preheat oven to 200°C/180°C fan.
Combine the ground paprika, ground coriander, ground cumin, ground thyme, black pepper and sea salt flakes in a bowl and add the king prawns. Set aside to marinade for 10 minutes whilst you get on with everything else.
Prepare your guacamole by mashing together avocado, lime juice, garlic, green chilli, coriander and 1/4 of the olive oil in a medium bowl. Season to taste
Heat a glug of olive oil in a heavy-based frying pan over high heat and sear the onion and pepper, stirring occasionally, until just coloured and starting to caramelise, 8-10 minutes. Season with salt and black pepper. Transfer your veggies to a plate and cover to keep warm.
Warm the tortillas in the oven according to pack instructions.
Add another splash of olive oil to the now-empty pan over medium-high heat and add the marinated prawns. Cook for 2-3 minutes until prawns are fully cooked - opaque and white on the inside.
Serve warmed tortillas, marinated prawns, onion-pepper mix, fresh guacamole and sour cream at the table - allowing everyone to make their fajitas!
