BBQ season is nearly upon us and for that reason, we couldn't not have an instant click to a fabulously low-maintenance and totally delicious burger recipe. Paired with homemade wedges, which of course can be swapped out for a quicker pre-prepared option, we highly recommend you give this one a go for a treat one warm summer's evening.

Method

Based on 4 servings, adjust as needed.

Step 1

Preheat the oven to 210°C/190°C fan. Line a baking tray with non-stick parchment paper. Cut the potatoes into wedges (no need to peel). To do this, cut the potato in half lengthways, then cut each half into 4 or 6 wedges, depending on the size of the potatoes. Try to aim for each wedge to be roughly the same thickness.

Step 2

Place the cut wedges onto the lined tray and season with the ground cumin, smoked paprika, salt, pepper and half of the vegetable oil. Toss the wedges well in the spices to make sure they are well seasoned. Place the tray into the preheated oven to bake for 35 minutes, turning once during cooking.

Step 3

When the wedges have about 15 minutes of cooking time left in the oven, heat a large frying on high and add the remaining vegetable oil. Once hot, place in the burgers. Cook for 4-5 minutes per side before laying on a slice of Gouda. Transfer the burgers to a tray and pop them into the oven to join the wedges for 3-4 minutes until the cheese has melted.

Step 4

While the burgers are cooking, you can prepare the garnish by slicing the tomato and red onion, draining the gherkins and separating the leaves from the baby gem and giving them a quick wash.

Step 5

Remove the burgers from the oven and leave them to rest for a few minutes while you toast your burger buns. Wipe out the pan you cooked the burgers in using some kitchen towel. With the heat on high, lay in the brioche buns cut side down and toast for 1-2 minutes until slightly golden. Put to one side and turn off the heat.

Step 6

Serve the wedges in a large bowl and assemble the burgers. Place a spoonful of mayo on each half of the brioche buns. Add the lettuce, sliced tomato and red onion. Top with the burger and a few slices of gherkin. Place on the burger top and serve.
