Jamaican Bully Beef

Method

Based on 4 servings, adjust as needed.

Step 1

In a frying pan, heat oil over medium-low heat. Once hot, stir in the onion, spring onion, garlic, thyme and scotch bonnet. Cook for 8 mins until the onions have softened slightly. Add the tomato and pepper and cook for 4-5 mins until everything is tender.

Step 2

Increase the heat to medium-high and add the corned beef, breaking it up in the pan with a wooden spoon before stirring in the ketchup, Jamaican jerk seasoning and ½ tsp freshly ground black pepper. Cook for another 6 mins, stirring occasionally and serve with cooked white rice and thyme leaves to garnish.

  • 0.5 Scotch Bonnet Chilli, deseeded and finely chopped (you can adjust this according to your spice levels) 1x Sainsbury's Scotch Bonnet Chillies 60g
  • 2 Pepper, cored and finely chopped 2x Sainsbury's Red Pepper
  • 1tbsp Sunflower Oil, for frying 1x JS Sunflower Oil 1L
  • 1 Onion, finely chopped 1x Sainsbury's Onions Loose
  • 3 Garlic Cloves, finely chopped 1x Sainsbury's Garlic
  • 340g Corned Beef 1x Princes Corned Beef 340g
  • 4 Spring Onion, finely sliced 1x Sainsbury's Spring Onions Bunch 100g
  • 3 Tomato, chopped 1x Sainsbury's Large Vine Tomatoes 500g
  • 440g Cooked White Rice, to serve 2x Ben's Original Classic Long Grain Microwave Rice 220g
  • 1 tbsp Thyme, picked leaves, to serve 1x Sainsbury's Bunched Thyme 20g
  • 2 tbsp Jamaican Jerk Seasoning 1x Dunn's River Jamaican Jerk Seasoning 300g
