Honey Roasted Salmon and Spinach Gnocchi

A classic and super tasty dinner that can be thrown together in no time at all. Made using a few cheat Ingredients to speed up the cooking process. This dish is also great with leftover roast chicken or ham and will happily take extra veggies if you have some that need to be used up.

Method

Based on 4 servings, adjust as needed.

Step 1

Preheat the grill to high and bring a pan of water to the boil with a big pinch of salt.

Step 2

Place the gnocchi into boiling water and cook for 2 minutes. Place spinach into the pan to join the gnocchi and cook for a further 20 seconds. Drain and return to the saucepan, reserving 1 ladle of the cooking water.

Step 3

Put the cream cheese into a saucepan and add the juice and zest of the lemon and chopped dill. Season with salt and pepper. Stir over a low heat until the cheese has melted. Add in the reserved ladle of the cooking water. Gently tear in the salmon fillets into chunks and fold them through the cheese sauce. (see tips if you have received raw salmon fillets).

Step 4

Add the cheese sauce to the cooked gnocchi and spinach. Coat well before pouring the contents of the pan into a baking dish. Scatter over a generous amount of grated parmesan cheese. Grill for 5-6 minutes until the top bubbles and is golden brown.

  • 1kg Fresh Gnocchi 2 x Sainsbury's Fresh Gnocchi 500g
  • 250g Cream Cheese 1 x Philadelphia Light Low Fat Soft Cream Cheese 280g
  • 60g Parmesan Cheese, grated 1 x Sainsbury's Fresh Grated Parmigiano Cheese 60g
  • 1 Lemon, zest and juice 1 x Sainsbury's Lemons
  • 20g Dill, chopped 1 x Sainsbury's Bunched Dill 20g
  • 100g Spinach Leaves 1 x Sainsbury's Baby Leaf Spinach 120g
  • Maldon Salt, to taste 1 x Maldon Sea Salt Flakes 250g
