Air Fryer Salmon, Greens and Grains

Salmon fillets cook beautifully in an air fryer and make a delicious meal when coated in a herb seasoning and served with greens and grains

Method

Based on 4 servings, adjust as needed.

Step 1

Combine the dried mixed herbs and garlic granules, (if using) along with a little salt and pepper in a bowl, then scatter onto a plate. Rub each salmon fillet with a little olive oil and roll in the seasoning to coat.

Step 2

Put in the air fryer basket in one layer and cook at 180°C for 8-10 mins, until cooked through. If you have larger salmon fillets they will need to be cooked for longer – keep checking after 10 mins and cook in 1-2 min blasts, until ready.

Step 3

While the fish is cooking you can steam-fry the kale. Heat a frying pan with a splash of oil. Once hot, add the kale and season with salt and pepper and add a splash of water. Cook for 3-4 minutes until the kale has wilted. Drain the kale, removing most of the liquid before adding a squeeze of lemon juice. Heat the quinoa according to the packet instructions.

Step 4

Serve the moist and tender salmon with the cooked greens, grains and a wedge of lemon.

  • 200g Kale, or any seasonal greens 1x Sainsbury's Kale 200g
  • 500g Cooked Grains 2x Merchant Gourmet Simply Cooked Glorious Grains with Red Rice & Quinoa 250g
  • 1 Lemon, cut into wedges 1x Sainsbury's Lemons
  • 1 tsp Garlic Granules 1x Sainsbury's Garlic Granules 58g
  • 4 Salmon Fillets, skin on or removed 2x Sainsbury's Skin on ASC Scottish Salmon Fillets x2 240g
  • 0.5 tbsp Olive Oil 1x Sainsbury's Olive Oil 500ml
  • Maldon Salt, to taste 1x Maldon Sea Salt Flakes 250g
