Salmon fillets cook beautifully in an air fryer and make a delicious meal when coated in a herb seasoning and served with greens and grains
Based on 4 servings, adjust as needed.
Combine the dried mixed herbs and garlic granules, (if using) along with a little salt and pepper in a bowl, then scatter onto a plate. Rub each salmon fillet with a little olive oil and roll in the seasoning to coat.
Put in the air fryer basket in one layer and cook at 180°C for 8-10 mins, until cooked through. If you have larger salmon fillets they will need to be cooked for longer – keep checking after 10 mins and cook in 1-2 min blasts, until ready.
While the fish is cooking you can steam-fry the kale. Heat a frying pan with a splash of oil. Once hot, add the kale and season with salt and pepper and add a splash of water. Cook for 3-4 minutes until the kale has wilted. Drain the kale, removing most of the liquid before adding a squeeze of lemon juice. Heat the quinoa according to the packet instructions.
Serve the moist and tender salmon with the cooked greens, grains and a wedge of lemon.
