This works so well as a really simplified version of a pie and is super easy to adapt too. You can add a little more flavour or veggies as your baby gets more familiar with this dish or as they get older (or for your own portions). It’s easy, delicious and filling, and is good for making in bulk too!
Based on 2 servings, adjust as needed.
Bring two large saucepans of water to the boil. Add the chicken to one and poach for 10–15 minutes, until it’s cooked all the way through. Then drain and remove the chicken to the side. Add the potatoes to the other pan and cook for 12–15 minutes, until they are soft enough to stab with a knife.
Add the spring onions, peas and/or spinach to the pan with the potatoes for the final 3 minutes to cook.
Preheat the grill. Add the chicken to a 20cm round ovenproof dish or divide it between little ramekins.
Drain the potatoes, spring onions and peas and/or spinach. Leave to steam-dry for a few minutes and then pour them back into the pan. Add the milk and mash well.
Top the cooked chicken with the potato mash and the cheese (if using).
Pop under the grill for 5 minutes (or until the top is beginning to get nice and golden).
Leave to cool before serving. You might want to serve your baby’s portion with the parts separated out so they can grab the chicken pieces as finger food. Alternatively, offer it with a spoon and break down the chicken in the base first, if your baby needs it.
