Kiddies Cover All Curry

Curries are a go-to for many families, but can be tricky if your kids aren't familiar with hotter, spicier flavours. This curry is a perfect ease-in - it's easy to adapt the heat (if you want more spice, add more), but it's also simple, has a lovely flavour and contains veggies that children usually love! You can easily vary the veggies, of course. This one was a winner with Raffy and has become a firm favourite.

Method

Based on 4 servings, adjust as needed.

Step 1

Heat the oil in a large frying pan (or wok) over a medium heat, add the diced onion, chopped garlic, coriander stalks (chopped, no tops) and sliced carrot. Cook for 5 minutes, stirring occasionally.

Step 2

Add the diced butternut squash and mild curry powder and cook, stirring, for another 5 minutes.

Step 3

Add the coconut milk, along with 200ml of hot water (if cooking for 4) and the drained chickpeas and cook for 15-20 minutes (until the squash is soft and the sauce reduces a little).

Step 4

Add the chopped mangetout for the final 5 minutes.

Step 5

Heat the rice according to the packet instructions and serve with yoghurt dolloped on top and the picked coriander leaves (if you fancy) and a squeeze of lime.

  • 400g Butternut Squash, peeled, deseeded and cut into 2cm chunks 1x Sainsbury's Butternut Squash Slices, Inspired to Cook 400g
  • 1 tbsp Mild Curry Powder 1x Sainsbury's Mild Curry Powder, Inspired to Cook 79g
  • 400ml Coconut Milk, tin 1x Sainsbury's Coconut Milk 400ml
  • 1 Tin Chickpeas, drained 1x Sainsbury's Chickpeas in Water 400g (240g*)
  • 100g Mangetout, roughly chopped into thirds 1x Sainsbury's Trimmed Mange Tout 200g
  • 2 pouches Cooked Basmati Rice 2x Ben's Original Classic Basmati Microwave Rice 220g
  • 4 tbsp Coconut Yoghurt, or any plain yoghurt 1x The Coconut Collab Natural Coconut Yoghurt 350g
  • 4 Lime Wedges 1x Sainsbury's Limes
  • 2 Garlic Cloves, peeled and finely chopped or crushed 1x Sainsbury's Garlic
  • 1 tbsp Vegetable Oil 1x Sainsbury's Vegetable Oil 1L
  • 1 White Onion, peeled and thinly sliced 1x Sainsbury's Onions Loose
  • 10g Coriander, stalks finely chopped and leaves reserved for the top 1x Sainsbury's Fresh Packed Bunch Coriander 30g
