Energy Bites

These nutrient-dense energy bites give you a quick boost of energy as well as five plant points per bite! A sure-fire way to get you to your 30 a week. They are a great source of protein, fibre and healthy fats too. These are perfect for on the go or a pre-workout snack.

Method

Based on 20 servings, adjust as needed.

Step 1

Blitz the almonds in a food processer until finely crushed.

Step 2

Add the remaining ingredients along with 2 tablespoons of water (if making 20 balls). Blend until everything is mixed together and the mixture is lovely and sticky.

Step 3

Line a baking sheet with baking parchment. Roll the mixture into about 20 bite-sized balls and place on the lined baking sheet.

Step 4

Pop them in the freezer for an hour to set, then store in airtight container in the fridge for up to 2 weeks or 3 months if frozen.

  • 200g Almonds, or cashews 1x Sainsbury's Cashew Kernels 200g
  • 1 tbsp Ground Flaxseeds, or golden linseeds 1x Yum & Yay Glorious Milled Golden Flaxseed 200g
  • 4 tbsp Cacao Powder 1x Food Thoughts Organic Cacao Powder 125g
  • 1 tbsp Chia Seeds 1x Sainsbury's Chia Seeds 150g
  • 2 tbsp Dark Roast Smooth Peanut 1x Manilife Original Roast Smooth Peanut Butter 275g
  • 400g Medjool Dates, stoned 1x Sainsbury's Medjool Dates, Taste the Difference 500g
  • 2 tbsp Coconut Oil 1x Sainsbury's Organic Virgin Coconut Oil 300ml
