This delicious granola has a whopping 11 plant points! Enjoy it as a crunchy topping for live dairy or coconut yoghurt or serve with your favourite milk and add a bit of kefir.
Based on 10 servings, adjust as needed.
Preheat your oven to 180°C/160°C fan/gas 4 and line a large, shallow baking sheet with baking parchment.
Mix the oats, seeds, nuts, cranberries, apricots and coconut in a large bowl.
In a saucepan on a low heat, gently warm the oil and syrup together and add the vanilla extract and spices. Pour the warm spiced syrup over the dry ingredients, mix well and spread out evenly on the lined baking sheet.
Bake for 20-25 minutes or until it's nicely toasted. Remove from oven and allow to cool. Store in an airtight container or ziplock bag at room temperature. will keep for up to 2 weeks.
Serve with yoghurt, kefir, or berries and drizzle with honey or maple syrup.
