Miso Bean Bowl

by Bold Bean Co

Bold Bean say "This is what we call a BEAN-BANKER, one to store in your back pocket as it's super easy to make. Use the miso bean base as a constant - but mix up your toppings depending on what you have available to you."

Method

Based on 2 servings, adjust as needed.

Step 1

Melt the butter in a medium-sized saucepan over a low heat. Add the onion and cook for a few minutes, then add the garlic. Once translucent, add the beans, along with all of their bean stock.

Step 2

Let the beans bubble away for a few minutes, mashing them up as you go to reach your desired consistency. Add the lemon juice and miso paste and stir to combine. Keep cooking for a couple of minutes, adding a splash of water if the mixture looks too thick, just to make sure the miso has melted through the beans.

Step 3

Pour your miso beans into a bowl and top with whatever you fancy! We love serving with a soft boiled egg, a spoonful of kimchi, some steamed broccoli or just some chilli oil and chopped coriander.
