Vegan Feta, Cucumber and Apple Salad

Magic happens when you combine cool cucumbers and crunchy apples. This is a perfect side dish for summer picnics and barbecues. It's addictively good and takes just minutes to make.

Method

Based on 4 servings, adjust as needed.

Step 1

Cut the cucumber into 1cm pieces. Prepare the apple by cutting it into half-moon slices. Thinly slice the radishes and chop the basil. Put most of the pistachios (reserving some to garnish) in a food processor. Add the vinegar, maple syrup and oil, and blitz for a few seconds until slightly smooth. Season to taste with salt and black pepper.

Step 2

Combine the remaining salad ingredients in a serving bowl. Pour the pistachio dressing over the top and gently fold through. Sprinkle with the remaining pistachios and season with more salt and black pepper.

  • 2tbsp White Wine Vinegar 1x Sainsbury's Wine Vinegar, White Wine 500ml
  • 40g Pistachios, crushed 1x Sainsbury's Pistachio Nuts 100g
  • 6 Radishes, thinly sliced 1x Sainsbury's Radish 240g
  • 1 Granny Smith Apple, cut into half-moon slices 1x Sainsbury's Granny Smith Apples Single
  • 2tbsp Fresh Mint Leaves 1x Sainsbury's Fresh Packed Mint 30g
  • 1tsp Maple Syrup 1x Clarks Original Maple Syrup with Carob Syrup 180ml
  • 115g Vegan Feta, crumbled 1x Violife Greek White Block Vegan Alternative to Cheese 230g
  • 3tbsp Extra Virgin Olive Oil 1x Sainsbury's Olive Oil, Extra Virgin 250ml
  • 1 Cucumber, halved lengthways then halved crossways, then cut into 1cm pieces 1x Sainsbury's Whole Cucumber
