Spicy Meatballs with Chilli Black Beans

Method

Based on 4 servings, adjust as needed.

Step 1

First make the meatballs. Tip the mince into a bowl, add the oats, spring onions, spices and the chopped coriander stalks, then lightly knead the ingredients together until well mixed. Shape into 12 ping-pong- sized balls (a wet hand while doing this will help prevent the meat sticking to you). Heat the oil in a non-stick frying pan, add the meatballs and cook, turning them frequently, until golden. Remove from the pan.

Step 2

Tip the onion and garlic into the pan with the pepper and stir-fry until softened. Stir in the cumin and chilli paste, then pour in the stock. Return the meatballs to the pan and cook, covered, over a low heat for 10 mins. Stir in the tomatoes and drained beans, and cook, uncovered, for a few mins more. Toss the avocado chunks in the lime juice and serve the meatballs topped with the avocado and coriander leaves.

  • 1 Tin Black Beans, or red kidney beans, drained 1x Sainsbury's Black Beans in Water 400g (235g*)
  • 1 Avocado, stoned, peeled and chopped 1x By Sainsbury’s Medium Ripe & Ready Avocado
  • 0.5 Lime, juice of 1x Sainsbury's Limes
  • 500g Turkey Breast Mince, 7% fat 1x Sainsbury's 7% Fat Fresh British Turkey Mince 500g
  • 300 ml Chicken Stock 1x Sainsbury's Chicken Stockpots x4 112g
  • 50g Porridge Oats 1x Stamford Street Co. Porridge Oats 1kg
