Sausage and Lentil Cassoulet

This filling and easy sausage cassoulet packs in bags of flavour without a big price tag. A simple one-pot meal that the whole family will enjoy.

Method

Based on 4 servings, adjust as needed.

Step 1

Heat half of the oil in a flameproof casserole over a medium heat and cook the sausages for 5-6 mins until golden. Remove to a bowl and set aside. Add the onion and bacon to the pan and cook for 10 mins until golden, then return the sausages to the pan.

Step 2

Add the carrots, rosemary, garlic and paprika, and cook for 2 mins until the carrots have just started to take on some colour. Tip in the tomatoes and lentils (along with the liquid from the can), and season. Bring to the boil, reduce the heat to a simmer, cover and cook for 20 mins until the lentils are tender and the sausages are cooked through. Cook the broccoli in boiling salted water for 3 minutes. Drain and keep warm.

Step 3

Meanwhile, heat the grill to high or the oven to 220C/200C fan/gas 7. Rub the remaining oil into the breadcrumbs, then scatter them over the sausage mixture. Grill or bake for 5-10 mins, watching closely to ensure the breadcrumbs don't catch until the topping is crunchy and golden. Serve with dijon mustard and the cooked broccoli.

  • 100g Smoked Streaky Bacon, roughly chopped 1x Sainsbury's Smoked Streaky Bacon Rashers x14 300g
  • 400g Green Lentils, canned 1x Sainsbury's Green Lentils In Water 400g (265g*)
  • 2 tbsp Olive Oil 1x Sainsbury's Olive Oil 500ml
  • 2 Carrots, peeled and sliced 2x Sainsbury’s Carrots Loose
  • 2 spring Rosemary Sprigs, chopped, of half the amount of dried 1x Sainsbury's Fresh Packed Rosemary 20g
  • 2 tsp Smoked Paprika 1x Sainsbury's Smoked Paprika 44g
  • 75g Fresh White Breadcrumbs, see tip, below 1x Sainsbury's Panko Breadcrumbs, Inspired to Cook 100g
  • 400g Chopped Tomatoes, canned 1x Stamford Street Co. Chopped Tomatoes in Tomato Juice 400g
  • 4 Garlic Cloves, chopped 1x Sainsbury's Garlic
  • 2 tsp Dijon Mustard 1x Sainsbury's Dijon Mustard 185g
  • 300g Tenderstem Broccoli, to serve 1x Sainsbury's Tenderstem Broccoli 330g
