Kiddies Salmon Flash-Fried Rice

Serve up a nutritious family dinner in just ten minutes with the help of some precooked salmon fillets, frozen or canned mixed veg, and basmati rice.

Method

Based on 4 servings, adjust as needed.

Step 1

Heat the sesame oil over high heat, then fry the spring onion for a minute or so, stirring all the time. Tip in the frozen mixed veg and stir for another 2-3 mins until it’s all defrosted.

Step 2

Add the cooked rice, soy sauce and honey or (maple syrup), still stirring, then add the beaten eggs, stirring for another 2-3 mins until it resembles egg fried rice. Gently stir through the flaked salmon, being careful not to break it up too much. Season and drizzle in more soy, if you like. Grown-ups can add chilli oil for an added kick.

  • 440g Basmati Rice, cooked 2x Ben's Original Classic Basmati Microwave Rice 220g
  • 200g Mixed Frozen Veg, or canned. Peas, diced peppers, sweetcorn, diced carrot and chopped spinach 1x Sainsbury's Mixed Vegetables 1kg
  • 4 Pre Cooked Salmon Fillets, flaked 2x Sainsbury's Steamed ASC Scottish Salmon Portions x2 180g (Ready to eat)
  • 1 tsp Honey, or maple syrup 1x Sainsbury's Clear Honey 454g
  • 2 Eggs, beaten 1x Sainsbury's British Free Range Eggs Medium x6
  • 2 tsp Chiu Chow Chilli Oil, to serve 1x Lee Kum Kee Chiu Chow Chilli Oil 170g
  • 2 Spring Onions, chopped 1x Sainsbury's Spring Onions Bunch 100g
  • 1 tbsp Soy Sauce, plus extra to serve 1x Sainsbury's Soy Sauce Reduced Salt 150ml
