One-Pot Sausage, Beans and Peppers

by Cherrypick

Discover your new weeknight hero – the smoky, rich flavours of sausage and harissa are ideal for nights when you crave something hearty with minimal clean-up.

Method

Based on 4 servings, adjust as needed.

Step 1

In a large frying pan over a medium-high heat, drizzle in the oil, then fry the onions until translucent and lightly browned around the edges, approximately. 3-4 mins. Season, then add the sliced peppers and cook until beginning to soften, about 4-5 mins. Tip in the chopped sausages pieces and stir through gently. Cook for 4-5 mins, stirring occasionally, until lightly browned all over.

Step 2

Add the beans and their liquid, harissa, garlic granules, sugar and a generous amount of salt and pepper. Stir well, bring to the boil then reduce and allow to bubble gently for 10-15 mins, stirring occasionally until thickened slightly and sausages are cooked through. Serve with crusty bread.
