Mango Chutney and Chicken Sliders

Top these chicken sliders with mango chutney, red onion, chilli and cucumber salad, and a mint & yogurt dressing. They make fabulous finger food for summer or a quick lunch.

Method

Based on 4 servings, adjust as needed.

Step 1

Mix the yoghurt, mayonnaise and mint together in a small bowl, then season and set aside. Combine the red onion, chilli, cucumber and coriander in a separate bowl.

Step 2

Slice and shred the chicken. Serve with the yoghurt sauce, onion and cucumber salad, lettuce leaves, mango chutney and wholemeal rolls for making sliders, and eat any extra chicken with the salad on the side.

  • 0.5 Red Onion, finely chopped 1x Sainsbury's Red Onions Loose
  • 0.5 Red Chilli, deseeded and finely chopped 1x Sainsbury's Red Chillies 65g
  • 0.5 Cucumber, finely chopped 1x Sainsbury's Whole Cucumber
  • 0.5 Coriander, finely chopped 1x Sainsbury's Fresh Packed Bunch Coriander 30g
  • 1 Rotisserie Chicken, Shredded 1x Sainsbury's Roast Whole Cooked British Chicken 894g - 1112g
  • 2 heads Little Gem Lettuces, halved lengthways 1x Sainsbury's Sweet Gem Lettuce x2
  • 4 tbsp Mango Chutney 1x Sainsbury's Sweet Mango Chutney 240g
  • 4 Wholemeal Rolls, halved 1x Stamford Street Co. Wholemeal Rolls x4 300g
