Leftover Turkey Curry

👋 There is cooked chicken as an optional ingredient in this recipe as we assume you have cooked turkey in the fridge; if you don't, go ahead and purchase the cooked chicken, or try paneer as a veggie alternative. Method

Based on 4 servings, adjust as needed.

Step 1

Heat the oil in a casserole dish or shallow pan over a medium heat, and fry the onions for 10-12 mins until golden. Stir in the garlic, ginger, chilli and all the spices, and cook for 2 mins more until the mixture resembles a paste. Stir in the tomato purée, passata or chopped tomatoes and mango chutney, and bring to a simmer. Cook for a further 10 mins.

Step 2

Stir in most of the cream and the yoghurt, and return the mixture to a simmer. Add the shredded turkey (or chicken) and continue to simmer until the turkey is piping hot. Remove from the heat, drizzle over the remaining cream and stir through briefly. Scatter over some coriander and flaked almonds, and serve with the rice and naan breads on the side.

  • 1tbsp Tomato Purée 1x Sainsbury's Tomato Puree, Double Concentrate 200g
  • 1 Onion, finely chopped 1x Sainsbury's Onions Loose
  • 100ml Double Cream 1x Sainsbury's British Double Cream 150ml
  • 2tbsp Natural Yoghurt, optional 1x Sainsbury's Greek Style Natural Yogurt 200g
  • 1tbsp Mango Chutney 1x Sainsbury's Sweet Mango Chutney 240g
  • 2 tbsp Toasted Flaked Almonds 1x Sainsbury's Flaked Almonds, SO Organic 100g
  • 440g Cooked Rice 2x Ben's Original Classic Long Grain Microwave Rice 220g
  • Garlic Naan Breads, to serve 1x Sainsbury's Garlic & Coriander Naan x2 260g
  • 15g Chopped Coriander 1x Sainsbury's Fresh Packed Bunch Coriander 30g
  • 400g Passata Or Chopped Tomatoes 1x Sainsbury's Passata 500g
  • 3 Garlic Cloves, crushed or finely grated 1x Sainsbury's Garlic
