Teriyaki is usually made with chicken but it is just as banging with beef. A deceptively easy dish, which is perfect for a midweek meal.
Based on 2 servings, adjust as needed.
Mix together the light soy sauce, dark soy sauce, rice wine vinegar, runny honey, light brown sugar, ginger puree, garlic puree and 2 tbsp water (if cooking for 2) for the sauce and set to one side.
Spray a frying pan with low calorie cooking spray. Add the beef mince, breaking it into small pieces using a spatula, and cook over a medium–high heat for 5 minutes until almost browned.
Add the carrot and red pepper and continue to cook until the beef is completely cooked through. Turn down the heat and add the teriyaki sauce. Mix the sauce in well so that the beef is completely coated.
Cook the rice according to the packet instructions.
Serve the beef over the rice, garnishing with the spring onion.
