Sticky Teriyaki Beef and Rice

Teriyaki is usually made with chicken but it is just as banging with beef. A deceptively easy dish, which is perfect for a midweek meal.

Method

Based on 2 servings, adjust as needed.

Step 1

Mix together the light soy sauce, dark soy sauce, rice wine vinegar, runny honey, light brown sugar, ginger puree, garlic puree and 2 tbsp water (if cooking for 2) for the sauce and set to one side.

Step 2

Spray a frying pan with low calorie cooking spray. Add the beef mince, breaking it into small pieces using a spatula, and cook over a medium–high heat for 5 minutes until almost browned.

Step 3

Add the carrot and red pepper and continue to cook until the beef is completely cooked through. Turn down the heat and add the teriyaki sauce. Mix the sauce in well so that the beef is completely coated.

Step 4

Cook the rice according to the packet instructions.

Step 5

Serve the beef over the rice, garnishing with the spring onion.

  • 1 Small Red Pepper, sliced 1x Sainsbury's Red Pepper
  • 3 tbsp Light Soy Sauce 1x Sainsbury's Light Soy Sauce 150ml
  • 1 tsp Ginger Purée 1x KTC Minced Ginger Paste 210g
  • 2 tbsp Rice Wine Vinegar 1x Sainsbury's Rice Vinegar, Inspired to Cook 150ml
  • 20g Runny Honey 1x Sainsbury's Runny Honey 340g
  • 1 tbsp Dark Soy Sauce 1x Sainsbury's Dark Soy Sauce 150ml
  • 1 tsp Light Brown Sugar 1x Sainsbury's Fairtrade Light Soft Brown Sugar 500g
  • 1 tsp Garlic Purée 1x KTC Minced Garlic Paste 210g
  • 200g Lean Beef Mince 1x Sainsbury's British or Irish 5% Fat Beef Mince 250g
  • 1 Carrot, peeled and cut into matchsticks 1x Sainsbury’s Carrots Loose
  • Low Calorie Cooking Spray 1x Sainsbury's Olive Oil Cooking Spray 190ml
  • 250g Microwave Long Grain Rice 1x Sainsbury's Microwave Rice Long Grain White 250g
